The method

Three decisions, every steak.

Dry-aged

Time does what no marinade can — moisture leaves, flavor concentrates, and the texture turns tender in a way fresh beef simply is not. It costs us yield. It's worth it on the plate.

Wood-fired

A brick hearth with a real wood fire, not a gas broiler. It is a harder way to run a kitchen and the entire reason the crust tastes the way it does — the longer story is worth reading.

Hand-cut

Steaks are cut in house, which is why the 8oz and the 14oz strip are actual 8 and 14 ounce steaks — and why the King Cut exists at all.

A steakhouse on one side, a saloon on the other.

Most steakhouses close their kitchens at nine and their doors at ten. Ours hands the night to the saloon — 14 taps, a craft cocktail list, and a bar that pours until 2am Thursday through Saturday. Dinner does not have to end when the plates clear.

And because a table rarely agrees: the same kitchen runs Buffalo wings, fish fry, artisan pizza, and a thirteen-dish vegan menu. Bring the person who does not eat steak. They will not be eating a side salad.

From Amherst & Williamsville

Main Street the entire way — through Williamsville, Snyder, and Eggertsville straight to our door. Ten to fifteen minutes, no highway required.

From Kenmore & Tonawanda

Kenmore Avenue across to Main and you are here in about ten minutes — closer than driving downtown for a steak, with none of the parking hunt.

From the city

North Buffalo and Parkside are minutes up Main or Hertel — close enough that dinner and the saloon after is an easy call.

What does dry-aging actually do?

Two things: water leaves the meat, so the beef flavor concentrates instead of diluting on the grill — and natural enzymes tenderize the muscle over time. It is why a dry-aged strip tastes distinctly more like steak than the same cut fresh.

Do I need a reservation?

Midweek, walk in. Friday and Saturday after 6pm, a call ahead is smart — and groups over six should always call. The banquet room books separately.

What if someone doesn't eat steak?

That is the normal table here. Wings, Beef on Weck, fish fry on Fridays, artisan pizza, and a full vegan menu run alongside the steaks — nobody at the table is settling.

How late are you open?

The kitchen cooks until 10pm Tuesday through Saturday. The saloon keeps going — midnight early in the week, 2am Thursday through Saturday. Closed Sunday and Monday.
